Super Bowl Snackin’

Tow Times blogger Geri Roskopf included a Super Bowl Sunday snack in her weekly blog (see below). If you get time to watch the game, this would make a great addition. It gets our vote of MVP (Most Valuable Potato recipe).

Cheese and Bacon Potato Rounds

4 baking potatoes cut into ½ inch slices

¼ cup melted butter

8 slices bacon – cooked and crumbled (or use a jar of real bacon bits)

8 ounces shredded cheddar cheese

½ cup chopped green onions

Optional – sour cream

Preheat oven to 400 degrees

Toss potato slices in melted butter

Place on ungreased cookie sheet and bake for 30-40 minutes or until lightly brown

Turn over once during cooking time

Top with bacon, green onion and cheese

Bake until cheese is melted

Serve with sour cream
